Cooking Instructions:


  1. Wash and dry the fresh produce. Peel and finely chop or grate the garlic. Peel and finely slice the red onion. Deseed the red capsicum and cut into thin strips.
  2. To prepare the pangrattato - heat a large, wide-based pan with 1 tbsp olive oil over a medium heat. Once hot, add the garlic, panko breadcrumbs and a pinch of salt and cook for 3-4 minutes or until they're golden. Once done, transfer to a bowl and set aside for later.
  3. Meanwhile, cut the sausages into bite-sized pieces. Wipe the pan clean and return to a medium-high heat with 2 tbsp olive oil. Once hot, add the chopped sausages and cook for 4-5 minutes or until they're browned.
  4. Meanwhile, boil a kettle.
  5. Once browned, transfer the sausages to a plate and set them aside. Return the pan to a medium heat, add the sliced onion and capsicum and cook for 5-6 minutes or until starting to soften.
  6. Meanwhile, add the pasta to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat. Cook the pasta for 10-12 minutes or until cooked with a slight bite. Once done, keep a cup of the starchy pasta water and drain the pasta.
  7. Meanwhile, add the tomato paste, dried oregano and balsamic vinegar to the capsicum and onion. Return the sausages to the pan and crumble in chicken stock cube. Add the chopped tomatoes, sugar and pepper and cook for 6-7 minutes or until a thick pasta sauce remains.
  8. Meanwhile, once the pasta sauce has thickened, stir through the pasta. Add a splash of reserved starchy pasta water if the sauce is looking a little dry.
  9. Serve the capsicum & sausage pasta and garnish with the pangrattato Enjoy!
