Cooking Instructions:

1.       Wash the basil and chop roughly. Peel and finely chop the garlic.

2.        Boil a large pot of water with ½ tsp of salt.

3.       Heat a frying pan without oil on medium-high heat. Tip in your pine nuts and toast them until brown on all sides then remove. Once the pine nuts are cooked, remove them from the pan and set aside.

4.       Heat 1 tsp of olive oil and add the garlic and cook for 1 minute. Add the tomatoes together with the sugar, ½ tsp salt and pepper. Stir in the chili powder. Turn the heat to medium-low and leave to simmer.

5.       Meanwhile, boil the gnocchi for 3 minutes and then drain. They will float to the surface when ready.

6.       Once the tomato sauce is nice and thick tip in the drained gnocchi. Stir in ½ of the basil, cheese and pine nuts.

7.       Serve in warm bowls and scatter over the remaining pine nuts, basil and cheese. Enjoy!
