Cooking Instructions:

  1. Preheat the oven to 200 degrees Celsius.
  2. Rinse the chicken lightly under a cold running water. Pat dry the chicken using a paper towel. Dice the chicken.
  3. Wash the fresh produce. Cut the potatoes with skin on into bite-size pieces. Peel the onion and cut into thin wedges. Peel and finely chop the garlic. Roll the lemon with your hand on a hard surface to release more juice and cut into wedges. Juice the lemon wedges into a medium sized bowl, add the juiced wedges to the bowl. Pick the parsley leaves from their stems and roughly chop.
  4. Place the potato on a baking tray and drizzle with 2 tbsp olive oil and season generously with salt. Place in the oven and cook for 10 minutes.
  5. To prepare the chicken mixture, add the chicken, oregano, garlic and the onions to the lemon. Add 3 tbsp olive oil and season with salt and pepper and mix well.
  6. Spread the chicken mixture over the baking tray with the potatoes. Place in the oven and cook for 10 minutes.
  7. Meanwhile, crumble the feta.
  8. Add the olives to the baking tray. Sprinkle the feta over the potatoes and chicken. Place in the oven and cook for 5-10 minutes or until the potatoes are soft and the feta is starting to color.
  9. Divide between 2 plates and sprinkle with the parsley. Enjoy!
