This BOX includes: Quinoa, Sweet Potatoes, Mushrooms, Spinach, Garlic, Parmesan Cheese, Vegetable Stock

Cooking Instructions for 2 ppl:

1. Wash the produce. Peel and chop the sweet potatoes into cubes. Slice the mushrooms

into thin slices. Peel and mince the garlic finely. De-stem the spinach leaves.

2. Heat the oil in a large skillet over medium heat.

3. Add the sweet potatoes and mushrooms and cook, tossing occasionally, until golden

and beginning to soften, about 5 to 6 minutes.

4. Stir in garlic and cook for 1 minute.

5. Add the spinach, stock cube, water and 1⁄8 teaspoon pepper. Cook, tossing often, until

the vegetables are tender, about 10 to 12 minutes.

6. To cook the quinoa: Add 1⁄2 cup of dry quinoa to ~ 1 -1.5 cups water in a medium

saucepan and bring to a boil.

7. Reduce heat, cover and simmer until all water is absorbed, fluff with a fork and allow to

cool and set aside.

8. Serve the vegetables over the quinoa and sprinkle with parmesan.
